Cheesecakes are one of the most famous deserts out there. There are many varieties of this dessert. Its mostly based on the difference in the proportion of cream cheese, sugar and cream. Today I'm goin to share with you one of my favorite type of cheesecake- Burnt Basque cheesecake also know as San Sebastiàns cheesecake. The burnt top that gives a slight bitterness with the creamy yet dense cream cheese center is the main highlight of this dish. Today I'll be giving you guys the recipe of the basic vanilla flavored cheese cake.<3
i n g r e d i e n t s :
- 250g Cream Cheese🧀
- 60g Sugar
- 5g Flour
- 1 whole egg & 1 egg yoke🥚
- 150g whipping cream🥛
- A splash of vanilla extract (optional)
note: make sure that all the ingredients are in room temperature.
i n s t r u c t i o n s :
- Preheat your oven at 180 degree celsius for 10mins. You can save so much time by preheating your oven before making the batter as we only have a few ingredients to mix.
- Add 250g of cream cheese into a bowl and using a spatula or a whisk mash up the cream cheese. This step may sound a bit silly or unimportant but please make sure u mash up the cream cheese well before adding other ingredients or else your cheesecake could turn grainy. You gotta mix a lot in this recipe.
- Add 60g of sugar and mix till it's fully dissolved in the cream cheese.
- After that, add 5g of flour. You can use any kind such as cake flour, wheat flour, all purpose flour, corn flour etc. it's all up to your preferences. Some people add the flour at the end but i think you're more likely find unmixed chunks of flour if you do that.
- Now it's time for the eggs. Add the egg and the egg yoke one at a time so that it's well combined to the rest of the batter. Mix the batter very well. Your arms are gonna be tired after mixing but trust me, its worth the pain.
- Add the whipping cream and of course mix again!! you can also add the vanilla extract at this time. you will find this batter very watery compared to other cheesecakes but since we're gonna bake it, it'll be fine.
- Crumble a big piece of parchment paper and cover the inside of the baking tin you're gonna use. The crumbled paper will give the cake a beautiful finish.
- Pour in your batter and tap the tin on the counter top to release air bubbles.
- Bake it in the preheated oven at 220 degree celsius for 30 mins.
- Cool of the cake after baking. You need to have patience for this. It tastes the best after chilling the cake over night in the fridge after it cools down on the counter top.
